  • Olive oil for cooking
  • 1 x 425gram tin of tuna in springwater, drained
  • 5 eggs
  • 2 tbsp wholemeal flour
  • 2 tbsp mayonnaise
  • 1⁄2 cup green beans, very thinly sliced
  • 2 tbsp coriander, chopped
  • 4 tbsp Thai red curry paste
  • 1 tbsp oil
  • To serve: fresh salad leaves or steamed broccoli
  • Lemon wedges

WHY WE LOVE THIS

We love this recipe because tinned tuna is a very budget-friendly protein source which is filled with healthy omega-3 fats for heart and brain health. This has been a favourite for many of our NEST participants, even for those that initially didn’t like fish. Also, some of our charitable agencies have made it a weekly staple on their menus due to popular demand.

Thai Fish Cakes

STEPS

  1. 1. Add the tuna, eggs, flour, mayonnaise, green beans, coriander, and Thai curry paste in a bowl, stirring to combine.
  2. 2. Place a large frypan on a medium-high heat and add olive oil. Put tablespoons of the tuna batter into the pan, flattening slightly to make the cakes.
  3. 3. Cook for 2-4 minutes until golden brown on the bottom.
  4. 4. Flip the fish cakes to cook for a further 2-4 minutes on the other side.
  5. 5. Serve hot with a side of salad and a lemon wedge.

NEST is a six-week nutrition and health education program, teaching adults easy ways to cook and eat healthily on a budget through a series of practical and fun workshops.

The NEST program has been reviewed and updated to incorporate demographic specific learning and teacher resources, improving the participant experience. The highlight is a beautiful new NEST Everyday Cookbook packed full of easy, budget-friendly, delicious and nutritious recipes (all of which cost less than $2.00 per serve). All ingredients and step-by-step instructions are photo based, so it is accessible to low literacy and non-English speaking adults, who form a large part of the demographic we serve.
